Sugimoto, born into a family of sushi chefs, has devoted his life to the art of Japanese cuisine. With experience gained from working in esteemed restaurants and hotels across Japan, he founded "Sugimoto" in Azabu in 2005. In 2016, the restaurant relocated to Ginza and was renamed "Ginza Sugimoto." Recently appointed as culinary director at "Ginza Hassen" in 2022, Sugimoto's culinary expertise is showcased in his "innovative Kappo," seamlessly blending traditional Japanese techniques with Western and Chinese elements.
